Roasted Turkey in Pomegranate Glaze

For glaze:

  • 1.5 tbsp. pomegranate molasses
  • 1/2 tbsp. table horseradish, drain the liquid
  • 3 tbsp. l Dijon mustard
  • 1/2 tsp salt
  • 1.5 tsp whole black pepper

For turkey:

  • 1 (6.5 kg.) Thawed and gutted turkey
  • 120 gr. butter, room temperature
  • Salt and freshly ground black pepper
  • 4 tbsp. lightly salted chicken stock

 

Recipe preparation:

 

Preheat the oven to 230 ° C.

Prepare pomegranate glaze: mix pomegranate molasses, horseradish, mustard, salt, and black pepper in a bowl. Leave at room temperature for 29 minutes.

Rinse the turkey inside and out under cold water and wipe dry. Rub abundantly with butter and pepper and salt, inside and out. Tie the legs of the turkey and put the breast up in the baking dish. Put in the bottom of the oven and bake for 45 minutes, until golden brown. Then reduce the temperature to 179 ° C. and continue to bake, pouring chicken broth every 15 minutes for about 1 hour 15 minutes. A thermometer inserted in the thigh should show 70 ° C.

15 minutes before cooking, spread turkey with pomegranate icing and continue baking. Then remove the turkey from the oven and cover with foil, leave for 20 minutes.
