baked turkey breast recipe with butter and paprika

Ingredients for the recipe:

 

  • 1 (5-6 kg.) Thawed and gutted turkey
  • 1 tbsp. coarse salt
  • 1 tbsp. brown sugar
  • 2 tbsp. l juniper berries
  • 1 tbsp. l peppercorns
  • 3 bay leaves
  • Zest of 1 lemon, cut into wide stripes
  • 2 tbsp. l coriander seed
  • 2 tsp cumin
  • 6 cloves of garlic
  • 1 tbsp. l paprika
  • 240 gr. butter, room temperature

 

Recipe preparation:

 

Fill a large container with 2 liters of water, add 1 cup of salt, 1 cup of brown sugar, juniper berries, peppercorns, bay leaves and lemon zest. Bring to a boil and simmer for 10 minutes, until salt and sugar are completely dissolved. Add 4 liters of cold water, cool. Immerse the turkey completely in the brine; if the turkey is not immersed, add water. Refrigerate for 8-10 hours.

Remove the turkey from the brine, rinse and wipe dry. Grind coriander seeds, cumin and garlic in a mortar, transfer to a bowl, add paprika and butter, mix thoroughly. Grate the turkey with seasoned butter, inside and out, and under the skin. Leave the turkey at room temperature for 30 minutes.

Preheat the oven to 180 C. Put the turkey on the baking sheet, breast up, tie the legs and tuck the ends of the wings under the turkey. Put in the bottom of the oven and bake until golden until the thermometer inserted in the thickest part of the thigh shows 75 C. for about 35 minutes for every kilogram of turkey. Place on a cutting board and leave for 30 minutes.
